Dong Ding Oolong, one of Taiwan's most notorious teas, means "frozen peak" which refers to the Tung Ting Mountain, an area in Nantou Taiwan where the tea is grown. This variety, produced by the Huang Family has 40% oxidation levels and heavily baked. Grown at 900 meters above sea level, the terrior imparts flavors of tropical fruit while the processing coaxes out rich plum qualities and a raw honey sweetness. It also happens to be one of Waris' favorite teas. The altitude and the surrounding mountains ensure that the teas are grown cloaked in mist and get little sunshine. The temperatures can drop below freezing some nights. These factors contribute to the tea's natural sweetness and richness. The taste and aroma of Oolong lies somewhere between green and black tea, a sweet taste and fruity with bouquet aromas.
